This 10minute mushroom avocado toast is the perfect blend of creamy avocado and savory sautéed mushrooms, all on a crispy, toasted slice of bread. It’s a simple yet flavorful meal, ideal for breakfast, lunch, or even a quick snack. The rich mushrooms paired with fresh avocado make this dish both satisfying and nourishing.

 

Ingredients:

For the Avocado Toast:

1/23/4 medium ripe avocado (adjust based on preference)
2 slices bread (wheat, whole grain seeded, or glutenfree; see notes for GF bread recommendations)

For the Mushrooms:

78 oz. sliced shiitake mushrooms (about 3 cups when sliced; see notes for other mushroom substitutions)
1/2 teaspoon dried thyme (or twice as much fresh thyme)
1 pinch red pepper flakes (optional, for heat)
1 pinch black pepper
1 pinch sea salt
1/4 teaspoon garlic powder
12 tablespoons vegan butter (or olive oil; we used Miyoko’s vegan butter, but dairy butter works if not vegan)

For Serving:

Vegan Parmesan cheese (optional) or nutritional yeast with flaky salt

 

Instructions:

1. Sauté the Mushrooms:

In a large skillet, heat 1 tablespoon of vegan butter or olive oil over medium heat. Add the sliced shiitake mushrooms, dried thyme, and red pepper flakes (if using).
Cook, stirring occasionally, for about 57 minutes, or until the mushrooms soften and turn lightly browned. If the mushrooms begin to stick to the pan, lower the heat or add a little more butter or oil.

2. Toast the Bread:

While the mushrooms are cooking, toast the bread in a toaster or in the oven until crispy and golden.

3. Season the Mushrooms:

Once the mushrooms are cooked, turn off the heat. Stir in the sea salt, black pepper, and garlic powder. Taste and adjust seasoning as needed.

4. Assemble the Toast:

Spread the ripe avocado onto the toasted bread slices. Use a fork to mash it into a smooth, even layer.
Top the mashed avocado with the sautéed mushrooms. For an extra touch, sprinkle with vegan parmesan cheese or nutritional yeast and flaky salt.

5. Serve and Enjoy:

Serve the mushroom avocado toast immediately while fresh and warm. It’s best enjoyed right away, though leftovers are not ideal for freezing.
