8-Minute Sweet Potatoes

These quick and easy 8minute sweet potatoes are a perfect side dish or snack. With a crispy exterior and a tender, meltinyourmouth interior, they’re a delicious way to enjoy this nutritious vegetable in no time. The recipe uses simple ingredients and minimal effort, making it ideal for busy days.

Ingredients:

2 teaspoons avocado oil
1 pinch sea salt (optional)
1 large garnet yam or organic sweet potato

For Serving (Optional):

Tahini
Fresh parsley

Instructions:

1. Prepare the Sweet Potatoes:

Slice the sweet potato into rounds that are slightly less than 1/4 inch thick, leaving the skin on for extra nutrients and texture.

2. Cook the Sweet Potatoes:

Heat a large skillet (preferably cast iron) over mediumhigh heat. Once the pan is hot, reduce the heat to medium and add the avocado oil, swirling to coat the bottom of the pan.
Add the sweet potato slices in an even layer, ensuring they don’t overlap. If desired, sprinkle with a pinch of sea salt.
Cover the skillet and cook the sweet potatoes for 34 minutes, or until the bottom is golden brown and crispy.
Flip the sweet potato slices and cover the pan again. If they’re cooking too quickly, lower the heat slightly. Cook for another 3 minutes, or until both sides are golden brown and the sweet potatoes are forktender.

3. Serve and Enjoy:

Serve the sweet potatoes as they are, or drizzle with tahini and garnish with fresh parsley for added flavor. These make a great addition to breakfast bowls, pair perfectly with hummus, or can be enjoyed on their own.

4. Storing Leftovers:

If you have leftovers, store them covered in the refrigerator for 23 days. These sweet potatoes are best reheated on the stovetop over medium heat, as this will help maintain their texture. They are not ideal for freezing.

Tips for Success:

Sweet Potato Size: Choose a sweet potato that’s uniform in size to ensure even cooking. A large garnet yam works particularly well for this recipe.
Pan Type: Using a cast iron skillet helps achieve a crispy, golden exterior. However, any large, nonstick skillet will also work.
Texture Tip: To maintain the crispy texture, avoid overcrowding the pan. If necessary, cook in batches.
Additions: For extra flavor, you can add a drizzle of honey or sprinkle the sweet potatoes with cinnamon or paprika.
Storage: Leftover sweet potatoes can be stored in the fridge for up to 3 days and reheated on the stovetop for the best results.
