Coconut NoBake Cookies

These Coconut NoBake Cookies are a delicious, easytomake treat that combines the perfect balance of chocolatey goodness and coconut flavor. With just a few simple ingredients and no oven required, these cookies are a great snack for any time of day. Plus, they’re completely customizable with your choice of nut butter and toppings.

Ingredients:

2 tablespoons unsweetened cocoa powder or cacao powder
1/2 cup unsweetened shredded coconut
1 cup rolled oats (use glutenfree oats for a GF option)
1/3 cup salted natural peanut butter (creamy or crunchy, or substitute with almond butter)
1/2 teaspoon pure vanilla extract
1 pinch sea salt
2 tablespoons crushed salted roasted peanuts or shredded coconut (optional, for topping)
1/2 cup coconut sugar (or substitute with cane sugar)
2 tablespoons unsweetened almond milk (or any other nondairy milk)
3 tablespoons coconut oil (use refined for a milder coconut flavor, or substitute with vegan butter)

Instructions:

1. Prepare the Baking Sheet:

Line a baking sheet with wax paper or parchment paper to prevent the cookies from sticking as they set.

2. Cook the Base Mixture:

In a medium saucepan, combine the coconut sugar, almond milk, cocoa powder, and coconut oil. Heat over medium heat, stirring frequently, until the mixture comes to a low boil.
Once it starts to bubble, let it boil for 1 minute. After that, remove the saucepan from heat.

3. Mix the Ingredients:

Add the peanut butter (or almond butter), rolled oats, shredded coconut, vanilla extract, and a pinch of sea salt to the saucepan. Stir well to combine and make sure all ingredients are fully incorporated.

4. Shape the Cookies:

Using a spoon, drop heaping tablespoon amounts of the cookie batter onto the prepared baking sheet. If desired, sprinkle the cookies with crushed salted peanuts or extra shredded coconut for added texture and flavor.

5. Let the Cookies Set:

Allow the cookies to sit at room temperature for about 2530 minutes, or until they have cooled and hardened. They should firm up nicely as they cool.

6. Storage:

Once cooled and hardened, store the leftover cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for a longer shelf life. While these cookies are best when fresh, they will still be delicious for a few days after making.
